Francisco Clausell (Pakito) is a native of Benicassim. From a very early age he felt trapped by food and cooking. Despite his youth, his experience is impressive as it has been working in restaurants such as: Casa Irene and Cap del Port in Lerida, Can Pineda and Gargantua in Barcelona, Martín Berasategui, Arzak and Karlos Arguiñano in Guipuzcoa, among others.

Pakito has managed to transmit his great personality and combine the culinary tradition of El Palasiet with the most attractive features of the modern and indigenous cuisine.
